HOW TO: THE ONE-TORTILLA QUESADILLA


College is the time to experiment – styles, friendships, hobbies and even food. I've always been the kind of person to randomly add ingredients together and to see if I can create something that I might actually enjoy.

A couple of weeks ago, I decided to try something new. Occasionally, I look to Pinterest as an aid for trying new recipes, but this time, I chose not to. So on my weekly trip to Target, I picked up whole wheat tortillas, frozen chicken strips, spinach and shredded cheese.

When I entered my kitchen later that day, my plan was to make a quesadilla. A quesadilla as many of you may know consists of two tortillas with the cooked ingredients in between. The pack of tortillas I purchased only had eight tortillas in the pack. This was a dilemma. If I used two tortillas each time I made this meal, I would only be able to make it four times. If I wanted this quick meal idea to last, I would have to use only one tortilla at a time. So I did just that. I decided to call my creation the "One-tortilla quesadilla." Has a ring to do it, don't you think?

RECIPE

One tortilla of your choosing

1 tsp of butter or 1 spray of non-stick grease

1 handful of spinach

4 pieces of Tyson® chicken strips

2 handfuls of any shredded cheese

INSTRUCTIONS

1. Place 1 tsp of butter or 1 spray of non-stick grease to large frying pan. Turn stove on medium heat. If using butter, evenly spread around pan until completely melted.

2. Follow instructions according to the Tyson® chicken strips. Heat strips thoroughly.

3. After heating strips, set them aside on a paper towel to drain.

4. Using the same heating temperature, place tortilla in pan.

5. Add spinach and chicken strips to one side of tortilla. Sprinkle as much cheese as you please.

6. Flip the other half of the tortilla on top of the half with the ingredients, and press with spatula.

7. Continue flipping tortilla until golden brown and ingredients are melted.

8. Serve and enjoy!

It's a quick, easy meal for a college student who's constantly on the go. Although I only used the ingredients listed above, this meal is flexible, and you can add any ingredient of your choosing. I enjoy eating mine with a side of salsa, but it might be a game changer to eat it with queso. The possibilities are endless.
